Our certified organic chicken, from Viandes Biologiques de Charlevoix, is selected for its quality and its flavor. It is lightly smoked before being perfectly finished on our rotisserie, giving a signature taste.
Our selection of fish and seafood is certified Ocean Wise, a conservation program that helps ensure the health of our oceans.
We grow vegetables and herbs in our rooftop gardens.
We also have 5 rooftop beehives in Old Quebec and 15 other beehives in the lower St. Lawrence region.
Only restaurant in Canada to use 100% renewable green natural gas, we also transform all of our vegetable waste into vermicompost to nourish our rooftop gardens.
